Scalloped Potatoes / Batatas Gratinadas


PORTUGUÊS
600g batatas descascadas e cortadas às rodelas com cerca de 1/2 centimetro
1/2 cebola pequena finamente picada
2 c.sopa farinha
2 c.sopa manteiga
1 chávena queijo ralado
2 chávenas leite
sal e pimenta


Colocar metade das rodelas de batata num recipiente de ir ao forno, levemente untado. Temperar com sal e pimenta. Espalhar metade da farinha, cebola, queijo ralado e manteiga por cima das batatas. Repetir mais uma camada. Adicionar o leite. Tapar com folha de aluminio ou tampa e levar a forno quente durante cerca de 30 a 40 minutos. Remover a folha ou tampa e deixar gratinar uns minutos. Servir como acompanhamento. Na foto aparece uma salada de tomate feita à parte.

600g potatoes, peeled and sliced into approx 1/2 cm thick
1/2 small onion finely minced
2 tbsp flour
2 tbsp butter
1 cup shredded cheese
2 cups milk
salt and pepper


Place half the potatoe slices into a lightly greased baking dish. Season with salt and pepper. Dot with half the butter and sprinkle half the flour, onion and shredded cheese. Repeat a 2nd layer. Add the milk. Cover with lid or aluminum foil and place in a medium-hot oven for approx 30 to 40 minutes. Remove lid or foil and broil a few more minutes. Serve as a side dish. In the foto we have a tomato salad prepared separately.

Swiss Pumpkin // Abóbora Suiça

SWISS PUMPKIN (our version, inspired by Ruth Reichl)
ABÓBORA SUIÇA (nossa versão, com inspiração da Ruth Reichl) 



ENGLISH
Many years ago I read the book "Comfort me with Apples" by Ruth Reichl, editor of Gourmet Food Magazine. I discovered this interesting recipe, which, after trying for the first time, just loved! I now prepare a Swiss Pumpkin a few times per year, normally during the winter months since this is such a rich dish.
preparation time about 3 hours
yields 5 to 8 servings depending on size of pumpkin

INGREDIENTS
A whole pumpkin (make sure it fits in your oven!)
Olive Oil
sliced and toasted baguette or about 6 cups home-made croutons
about 2 cups shredded cheese (I usually use a mix of emmental, mozzarela and/or gruyére)
about 2 cups vegetable or chicken stock
about 1 cup cream or milk
1 or 2 eggs
Salt & Pepper
Nutmeg
(note: the amounts of cheese, bread and liquid items will vary depending on size of pumpkin to be filled)

PREPARATION

1. Wash the pumpkin!

2. Carefully slice open the top. (Make a large enough circle to fit your hand inside. Don't discard the top!)

3. Remove the seeds and strings as best you can. I usually use a strong large spoon.

4. Rub the outside of the pumpkin with olive oil (don't forget the top too!)

5. Start your first layer of bread in the bottom of the pumpkin. Sprinkle a generous portion of shredded cheese over the bread. Continue layering bread and cheese, ending with cheese. Don't fill the pumpkin right to the top since the filling is going to swell during the bake. Be sure to leave an inch of space.

6. In a bowl or other large container, slightly beat the egg, add the milk/cream and veggie/chicken stock. Season with salt&pepper and nutmeg (if desired), and mix well.

7. Slowly pour the mixture into the pumpkin.

8. Replace the pumpkin top and put the pumpkin into a pre-heated and hot oven.

9. Bake on high for the first hour, then reduce heat to medium and bake for another one  to two hours. Baking time will vary depending on size of pumpkin. Once the pumpkin skin is golden and crisp it's usually done. You can also gently poke your finger (don't burn yourself!) into the side of the pumpkin to check it is soft. Or remove pumpkin from oven, open the top and check for doneness of the pumpkin flesh.

10. To serve, carefully scoop out bread&cheese filling along with pumpkin flesh.

11. Serve with salad of your choice. Pictures show a simple side of grilled zuchinni slices with beet slices and olives, seasoned with olive oil, s&p and balsamic vinegar.

Há muitos anos li o livro "Comfort me with Apples" da Ruth Reichl, editora da revista Gourmet Food. Descobri esta interessante receita. Após a 1ª vez que a fiz, adorei. E agora faço esta abóbora algumas vezes por ano, nomeadamente no inverno pois é uma refeição bastante forte.

tempo de preparação cerca de 3 horas
serve 5 a 8 pessoas consoante o tamanho da abóbora

INGREDIENTES
Uma abóbora inteira (certifique-se que vai caber dentro do seu forno!)
Azeite
uma baguette cortada às fatias e torrada ou cerca de 6 chávenas de croutons (quadradinhos de pão torrado)
cerca de 2 chávenas de queijo ralado (normalmente utilizo uma mistura de emental, mozzarela e/ou gruyére)
cerca de 2 chávenas de caldo de legumes ou de galinha
cerca de 1 chávena de leite ou natas
1 ou 2 ovos
Sal e Pimenta
Noz Moscada
(nota: as quantidades dos ingredientes podem variar consoante o tamanho da abóbora)

PREPARAÇÃO

1. Lavar a abóbora!

2. Abrir o topo da abóbora com um círculo que seja suficientemente grande para lá meter a sua mão dentro. Não deite fora a tampa da abóbora!

3. Remova as sementes e os fios. Costumo utilizar uma colher grande para facilitar esta tarefa. 

4. Untar o exterior da abóbora com azeite. Não se esqueça de untar também o topo recortado!

5. Comece a primeira camada no findo da abóbora com o pão. Polvilhe uma generosa quantia de queijo por cima do pão. Continue a fazer as camadas de pão e queijo, e termine com o queijo. Não encha até a cima pois o recheio vai inchar durante a cozedura. Deixe cerca de 3cm de espaço no topo.

6. Numa tigela grande, bata ligeiramente o ovo. Adicione o leite ou natas e o caldo. Tempere com sal e pimenta e noz moscada (se desejar) e mexa bem.

7. Encha a abóbora com o líquido.

8. Colocar a tampa na abóbora e coloque num forno quente.

9. A 1ª hora no forno deve ser com temperatura alta. Reduza para uma temperatura média e asse durante mais uma ou 2 horas. O tempo de cozedura vai variar consoante o tamanho e espessura do miolo da abóbora. Quando a pele estiver dourada ou ligeiramente queimada, deve estar pronta. Pode carregar com um dedo (não se queime!) para ver se a abóbora está mole. Ou então remova a tampa e pique o miolo com um garfo para ver se está bem assada.

10. Para servir, utilize uma colher grande e retire o ensopado de pão e queijo juntamente com miolo de abóbora.

11. Sirva com uma salada à sua escolha. Nestas fotos fiz uma salada de courgette grelhada com beterraba e azeitonas, temperado com azeite, vinagre balsâmico, sal e pimenta.

Bifes de Soja com Molho de Pimenta Verde // Empadão de Espinafres // Soya Steaks with Green Peppercorn Sauce // Spinach Pie

Para o empadão: Em um tacho, fazer um refogado com azeite, meia cebola picada, um dente de alho picado e espinafres crus ou congelados, sal e pimenta. Se utilizar espinafres crus, não hesite colocar uma grande porção de espinafres no tacho pois vão murchar e reduzir imenso. Preparar puré de batata instantâneo ou caseiro conforme seu gosto. Eu costumo adicionar uma pitada de noz moscada ao puré. Colocar os espinafres no fundo de um recipiente para ir ao forno. Cobrir com puré de batata e espalhar de modo uniforme. Polvilhar com queijo ralado e colocar em forno quente cerca de 20 a 30 minutos ou até alourar.
  Para os bifes de soja: Demolhar os bifes de soja em água durante 15 minutos, escorrer e espremer. Em uma frigideira grande, aquecer azeite, um dente de alho picado, 2 colheres de sopa de grãos de pimenta verde e um pouco de gengimbre ralado. Colocar os bifes de soja e deixar alourar em lume brando durante cerca de 10minutos de cada lado. Temperar com sal e pimenta. Adicionar natas e deixar cozer mais uns minutos, virando e mexendo os bifes. Colocar em travessa ou prato. Guarnir com um pouco de salsa picada.
Como já costumo indicar, sinta-se à vontade para utilizar outros temperos. Os bifes de soja são completamente neutros e portanto vão absorver os sabores dos temperos que utilizar. Não tenha medo de experimentar novos sabores e novas ideias!

For the spinach pie: In a pot, heat some olive oil; half an onion, minced; one clove garlic, minced; salt and pepper. Add spinach (Use raw or frozen. Keep in mind that spinach wilts and its volume reduces tremendously, so be sure to use a big bunch of raw spinach!) Prepare your favourite mashed potato recipe, instant or home-made. I usually add some fresh grated nutmeg to my mashed potatoes. And don't forget butter, milk or cream and salt. In an oven safe dish, spread the spinach mixture. Cover with mashed potatoes and evenly spread them out. Sprinkle with grated cheese of your choice and place into hot oven for about 20 to 30 minutes or until golden brown.
For the soya steaks: soak the dehidrated steaks in lukewarm water for about 15 minutes. They tend to float to the top, so place a heavier item on top, like a small glass bowl, to hold the steaks under water! Rinse and squeeze out excess water. In a large saucepan heat up the olive oil, one clove minced garlic, 2tbsp green peppercorns and a bit of fresh grated ginger. Add in your soy steaks and allow them to brown for about 10mins per side. Season with salt and pepper. Add some fresh cream and allow the cream to cook for a few more minutes, careful to reduce your heat to low/medium-low. Place onto a platter (or directly on your plate) and sprinkly with fresh chopped parsley. As I usually suggest, feel free to improvise, use other condiments or herbs, increase or decrease your amounts. Experiment. Have fun with your food and be fearless in the kitchen! For example, bland soy steaks are the perfect blank canvas for seasoning. Feel free to season the spongy soy steaks before placing them into the hot olive oil. They will absorb whatever flavour you add to them. Perhaps a few spashes of red wine and some dried herbs of your liking. Or fresh grated ginger. Have fun and enjoy your meal!

Magic Quiche




Português: Massa Folhada; 4 ovos grandes; 1 tomate cortado às rodelas; 150g de espinafres; 1 dente de alho; 1 colher de sopa de azeite; 1/2 chicara de leite de arroz; 1 colher de chá de mostarda dijon; 1 colher de sopa de tomatada; 1 pitada de tomilho fresco bem picado; S&P a gosto; 150g de queijo (à sua escolha) ralado.

Refoga-se os espinafres em azeite e alho, e por fim acrescenta-se o leite de arroz. Numa liquidificadora, batem-se os ovos o tomilho, adiciona-se a mostarda dijon, a tomatada e por fim tempere com sal a gosto. Estenda a massa numa tarteira, polvilhe com metade do queijo ralado, de seguida estenda os espinafres, cubra com os ovos, e por ultimo volte a cobrir de queijo ralado. Decore com o tomate cortado às rodelas. Vai ao forno quente até aloirar. Sirva a seu gosto, decore o prato como desejar e com aquilo que lhe apetecer comer. Seja inovativo, adapte uma receita ao seu gosto - se não deseja mostarda, por exemplo, não a adicione; use uma variedade de queijos ralados, use outra erva aromática sem ser tomilho, seja inovador! Divirta-se a cozinhar, a preparar os pratos, mas sobretudo a deliciar-se com a sua refeição!

ENGLISH: Flaky Pastry; 4 large eggs; 1 sliced tomato; 150g spinach; 1 clove garlic; 1 tbsp EVOO (Extra Virgin Olive Oil); 1/2 cup rice milk; 1tsp Dijon mustard; 1 tbsp tomato paste; pinch of freshly chopped thyme; 150g grated cheese of your choice; 1 sliced tomato.

In a saucepan, heat up the oil and garlic and lightly sautée the spinach. Remove from heat and add rice milk. In a blender, beat the eggs, thyme, mustard, tomato paste, S&P to taste. Roll out the pastry into a pie dish. Sprinkle bottom of pastry with half the grated cheese. Cover grated cheese with spinach and spread evenly. Pour egg mixture over top. Sprinkle remaining grated cheese. Decorate with a few slices of tomato. Place in a hot oven until golden. Serve with side dish(es) of your choice.
As with most recipes, always feel free to improvise and adapt to your liking. That's part of the joy of cooking! For example, use any kind of cheese you like, use some other herb instead of thyme, use the mustard or not, use spinach or some other vegetable (like grated zuchinni is fantastic too!), use thick or thin slices of tomato over top of quiche. Have fun in the kitchen. Have fun serving the plate(s) too, experiment with different ways of arranging colourful side items on your plate! And most importantly, enjoy your meals!

Beringelas Recheadas - STUFFED EGGPLANTS - Entrada para a Festa de Aniversário do António



Corte a beringela no sentido longitudinal como vê na figura, retire o miolo com o auxilio de uma ferramenta apropriada e corte aos pedacinhos. Num tacho com azeite aquecido e três dentes de alho picados, refogue a beringela adicionando pimenta 4 variedades, moída no momento.
Adicione tomate maduro em cubos ao preparado, quando este já estiver bem lourinho.

Rege o recipiente que levar ao forno com um fio de azeite. Comece a primeira camada do recheio da Beringela com queijo cortado aos cubos. Introduza o refogado e cubra com queijo parmesão. Coloque no forno cerca de 30 minutos.

As Magda and I continue to add recipes and culinary suggestions to this blog, and to the giant expanse of the world-wide-web, our goal is also to share a part of ourselves and our filosofies of life and cooking lessons we learn along the way. Always remember to be creative and have fun. You don't have to follow our recipes to the "t". Experiment with new flavours, try adding a fresh herb or substituting one of ours. Learn what types of flavours are likely good to combine. Ask yourself what flavours do I enjoy? We find it satisfying and fulfilling to have fun in the kitchen. If you're single, open a bottle of wine and enjoy your own company. Tired of being alone? Well then invite over a friend, or five! :-) If there are two of you, make it a romantic adventure. Enjoy all your moments... for as we grow older we start to realize they will fly past us faster and faster!

Wash the eggplant and slice in half lengthwise. Using a mellon-baller or a spoon, carefully scoop out the contents into diced bits. In a heated saucepan or pot, add a couple tbsp of olive oil, and chopped or diced garlic. After a minute or two add the diced eggplant and cook over medium-high heat for about 10 minutes. Add diced tomatoes, as desired, and sautée another couple of minutes or until tender.

Into your chosen oven-safe dish, pour two tbsp olive oil and add the eggplant shells. Start layering the scooped out eggplant shells starting on the bottom with diced cheese of your choice. We suggest common yellow or white cheeses like swiss, edam, mozarella, flamenco or emmental. The next layer is the diced eggplant mixture. Finally sprinkle with grated mozarella or parmesan, or both! Place into a hot oven until cheese melts and begins to broil and eggplant shell starts to soften. Probably about 20 to 25 minutes. If you managed to polish off that first bottle of wine, now is the time to open another, set the table, and enjoy your meal! We chose to have a green leafy salad with fresh lettuce from our garden! Drizzled with a previously prepared dressing of olive oil, salt, lemon juice and balsamic vinegar. (Michael really dislikes the usual wine vinegars. Use a freshly squeezed half lemon instead! Much healthier too!) Bonne Apétit!
